Bebek Betutu or Betutu Duck is the mainstay dish of Balinese. The duck used for Betutu Duck is local duck. Betutu is a cooking way for duck which is very typical of Bali. Usually, it is made of a duck that is wrapped in banana leaf, then it is wrapped up tightly with areca sheath. The duck is put down in holes in the ground and covered with hot coals for 6-7 minutes until cooked. Then duck steamed for 1 hour and bake for 45 minutes over medium heat.
Formerly, this cuisine is served on a ceremonial banquet or religious banquet. However, as time goes on, Betutu Duck is sold in many food stalls, restaurants, and star hotels. Not only the local people but also the tourists love this cuisine.
